Get down on Super Bowl Sunday with these Korean Pork Sliders from Heirloom Market BBQ chefs Jiyeon Lee & Cody Taylor. KPop star turned star chef, Jiji, known by many of her colleagues, decided to take her Korean background of grilled meats and fermented side dishes and apply it to a cuisine that she could get behind –American barbecue. Use the spicy Korean pork sliders recipe below if you’re rooting for the Atlanta Falcons come Super Bowl Sunday.

SPICY KOREAN PORK SLIDERS RECIPE by Chefs Jiyeon Lee & Cody Taylor

YIELD: 12 Sliders

INGREDIENTS

Pork Marinade
2 lbs 1/2inch cubed pork loin
½ cup of gochujang (fermented Korean red pepper paste)*
2 tbsp minced garlic
1 tbsp minced ginger
1/2tsp black pepper
1tbsp soy sauce
2tbsp vegetable oil
¼ cup of mae ploy (sweet chili sauce)
1 tbsp Sriracha sauce
1 tbsp sesame oil
Sesame seed (optional)

*Available at Asian markets, health food stores and Amazon.

DIRECTIONS
In a medium mixing bowl, combine cubed pork loin, gochujang, garlic, ginger, black pepper, and soy sauce until all ingredients come together. Let pork stay in marinate from 2-24hrs in the refrigerator. In a medium pot, heat the vegetable oil over medium-high and add all the pork with the marinade into the pot stirring frequently…reduce heat to low simmer and keep stirring so the gochujang does not burn. Next, add the mae ploy and siracha…continue to stir over low heat for 20 minutes. Finish with sesame oil and serve hot. Garnish with sesame seeds.

 

INGREDIENTS

Kimchi Slaw
1lb sliced cabbage
½ cup of julienned carrot
¼ cup of coarse gochugaru (Korean chili pepper flakes)
3 tbsp sugar
2 tsp salt
¼ tsp black pepper
2 tsp minced garlic
¼ cup of water
3 tbsp white vinegar

In medium mixing bowl, combine everything except the cabbage and julienned carrot…whisk until smooth and set aside for 30 minutes (can be made a few days ahead). Next, add in cabbage and carrot and incorporate until slaw is mixed thoroughly.

ASSEMBLY
Place 12 of your favorite slider buns or 6 regular sized hamburger buns on platter, top with warm Spicy Korean Pork and kimchi slaw. Garnish with sesame seeds and green onions.
