Fact: chefs love eggs. And this is a really good thing for all of us. This product has spawned countless, amazing dishes and will continue to do so for (hopefully) all eternity. Chef James Syhabout spent almost five years at Manresa before opening his own restaurant, Commis. At Commis, he created his signature egg dish using slow poached egg yolk, smoked dates, onions, steal-cut oats and chives.
